If you want a light and fluffy cake, you'll definitely want to try this Feather Cake.<br />

<b>Feather Cake</b><br />
<br />
<br />
1/2 cup butter<br />
1 cup sugar<br />
3 eggs<br />
2 cups flour<br />
1 1/2 tsp. baking powder<br />
1/3 cup milk<br />
1 tsp. flavoring<br />
<br />
Cream butter, add sugar gradually. Beat eggs and add them.<br />
<br />
Sift flour and baking powder together and add alternately with the milk to the mixture.<br />
<br />
Add flavoring. Beat rapidly for a few minutes. Pour into loaf-cake pan and bake.<br />
<br />
Ice with simple white icing.<br />
<br />
Simple white or colored icing:<br />
<br />
1/2 tsp. butter<br />
2 tbsp. hot milk<br />
1 1/2 cups confectioners' sugar<br />
1/2 tsp. vanilla extract<br />
1/2 tsp. baking powder<br />

Add butter to hot milk. Add sugar slowly to make right consistency to spread. Add baking powder and vanilla. Spread on top and sides of cake.<br />

If pink icing is desired add 1 tbsp. strawberry or other fruit juice. For yellow icing add 1 tsp. egg yolk and flavor with orange rind and 1 tsp. lemon juice.<br />

I really liked this recipe. I was surprised because I don't usually see milk in a cake recipe, but then I remember these are from the old days.<br />
<br />
The recipe instructions are vague; it calls for 1 tsp. flavoring. I used vanilla but you could use any extract flavor to give it a different taste. I floured the pan so it wouldn't stick and baked it for 45 minutes at 350 degrees in the oven since no time or temperature was specified.<br />
<br />
As I was mixing the batter, I was intrigued at the consistency. It was thick, and the consistency and color was like that of a watered down sugar cookie recipe.<br />
<br />
But the end result of the cake was great! The icing was a little too sweet for my liking, though.<br />

</div><div style="text-align: left;">First, flour the raisins with 4 tbsp. flour. I put the raisins in a big bowl and mix it with the flour. The original recipe also states to cut the raisins in half, but I've never done that and it has come out just fine.</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">Next, dissolve baking soda in 1 tbsp. water. Add this to the sour milk. I'm pretty sure you used to be able to buy sour milk at the store, but I don't think it's available anymore. To make one cup of sour milk yourself, set out the milk and let it get to room temperature. If you don't have time for it to reach room temperature, you can always put it in the microwave for a few seconds. Once it is the right temperature, add 1 tbsp. vinegar or lemon juice and stir. You will soon notice the milk start to curdle.</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">After you add the dissolved baking soda to the sour milk, beat. Add molasses and beat some more.</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">Next, add the melted butter. Stir in the flour and brown sugar. Add in the spices and beat well. </div><div style="text-align: left;"><br />
</div><div style="text-align: left;">Last, stir in the raisins. Once completely mixed, put in a greased bread pan.</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">Bake in a moderate oven for one hour. A lot of recipes from this time period used directions such as slow, quick, moderate or fast oven. There are sites online that will help you decipher what degree to set your oven to. For a moderate oven, this can be anywhere from 350 to 375 degrees.</div><div style="text-align: left;"><br />

The idea for Historic Eats started in 2010 when I first got my Amazon Kindle. I noticed that there were a lot of free books available for download and many of those were old cookbooks.<br />
<br />
I took a look at some of the recipes and found that many of them actually sounded appealing. So I decided to start making some of them in order to broaden my food knowledge.<br />
<br />
I love history and am the author of a local history book on my city. I also love food, so I decided to combine my love of food with my love of history to create Historic Eats.<br />
